We collaborated with Healdsburg Chef and good friend, Dustin Valette of Valette’s Healdsburg, to find the perfect dining in pairing for you to recreate at home. This set includes Valette’s recipe for Pan Roasted Filet Mignon with Roasted Asparagus, Maine Lobster and Olive Crushed Potatoes. This recipe was created specifically for the Aperture wines and the set includes winemaker Jesse Katz’s never before released 2016 Pinot Noir from Dry Stack Vineyard as well as Chef Valette’s custom spice blend created with ingredients from the Aperture Estate garden.
A portion of proceeds from this package goes to The Restaurant Employee Relief Fund, helping restaurant industry employees experiencing extraordinary hardship in the wake of the coronavirus disease (COVID-19) outbreak.
